Jumping Goats Dairy run a happy herd of free-range goats on their croft in Bettyhill. All kids are raised within the herd and they have very high welfare standards providing their goats with care and an environment that is well suited to their specific needs and preferences. They think that happy goats help them make tasty cheese!
They only use milk from their own goats, which they process by hand to make cheese. Their cheeses are individuals. Although they do pasteurise, their milk is not standardised - they use it whole, as it comes from the goats. The flavour and composition of the milk varies with the seasons. Goats are browsers and have their own ideas about what they eat and when. Milk from a nettle-eating-day will have a slightly different flavour from that of a heather-eating-day. Much like no two single cask malt whiskies are the same, each of our cheeses has its own character, but they're all good!
They make two varieties of cheese: the soft cheeses are fresh and mild with a creamy texture. They come as they are (Soft White) or flavoured with herbs and garlic (Soft Garlic). The pressed cheese is waxed and comes in different-sized rounds from about 200g to around 1kg. This cheese is firm and has a dry texture with a tangy, stronger flavour. All their processing is done by hand and they use vegetarian rennet in all their cheeses.
